Well, two minutes with Wikipedia, that infallible source, tells me: "Lobster Thermidor was created in 1894 by Marie's, a Paris restaurant near the theatre Comédie Française, to honour the opening of the play Thermidor by Victorien Sardou." Another two minutes with Google revealed a blogger saying "there are other stories, of course," which now I'd like to hear.
